After the superb Glenlivet 1981 I was keen on trying another of the newly released Signatory Exclusives,This time a younger Clynelish, in a refill sherry casks as well. we’re talking 55.5% here, distilled 28/6/1996 and bottled 8/4/2015 yielding 606 bottles , Natural color , NCF. Nice, right?
Nose: Starts with beeswax and nice sherry notes, which are more evident at first, then are toned down as it breathes in the glass. If you’re worried about smoke / peat- there’s mellow smoke and peppery peat,then some fragrant wood. This dram Feels much older than it is (wood wise) if you get what I mean.
Palate: Sweet and earthy. Rich syrup. Dried fruit. Quite spicy with fresh ground pepper. Ginger. Chilly. Chocolate. Baked apple.
Finish: Bitter sweet. Spicy wood. Waxy. Dry and earthy.
This is a rather excellent dram, You’re getting the whole Clynelish goodness, with the added sherry and complexity, the peper and wood go really well together, and although this may not sound like the most complex of drams the whole deal is much better than the sum of its components. It is a dram you will want to drink more and more, trust me. Brilliant stuff again from Signatory, and great choice of cask by TWE.
